How To Color Chocolate

Each 2 oz. bottle of coloring oil will color 6 lbs. of chocolate to a vibrant rich color.

.65 oz. bottles of chocolate color 2 lbs. of chocolate to a vibrant rich color.
The only exception is for red coloring, which will require more coloring.

Before beginning:

You need to know:

  • For painting details, it's easiest to use White Bada Bing Bada Boom Dipping & Enrobing Chocolate.
  • Prepare small batches and immediately put in refrigerator until set. Do not leave in longer than the amount of time it takes for the chocolate to set up.
  1. Melt or temper your chocolate according to instructions for the type of chocolate you have purchased.
  2. When you use coloring, think of them as mixing a colored paint with white paint - you create the depth of color/tine that you want by adding a few drops at a time to the melted white chocolate.
  3. Warm the coloring oil.

    How To Warm Coloring Oils:

    1. Make sure the lid is on tight. Place in a small zip lock plastic bag, removing all air.
    2. Place the plastic bag protected bottle in a warm water bath for 10–15 minutes (water should be no more than 20° warmer than the chocolate). Shake bottle every five minutes for even temperature distribution.
    3. Remove from plastic bag and be sure to dry off ALL water from the bottle before adding to the chocolate.
  4. Shake bottle well and use eye dropper to add desired amount to chocolate.
  5. Stir gently until completely mixed.
  6. If you are making multi-colored chocolates, do one color, allow to set up, then repeat with the next color. Allow each color to set up before continuing to the next step.
