Chocolates Hollow and Solid

To make a hollow or solid three dimensional chocolate piece you need to use a special type of mold that comes in two parts.
Some are open bottom and others are closed bottom.
Most hobby molds are closed bottom which means there is not an opening to pour the chocolate.
An open bottom mold has an opening to pour the chocolate into.
To make a HOLLOW chocolate, you will use a closed bottom mold.
- Partially fill each side of the molds with properly melted or tempered chocolate. The amount you pour in will depend on how thick you want the wall of the chocolate to be.
- After pouring the chocolate put the two mold pieces together creating as close as a fit as possible.
- Clip the two mold halves together using tight paper clips.
- Carefully rotate the mold until the chocolate has coated all the surfaces and there are no air bubbles.
- Refrigerate the chocolate until set.
- After the chocolate is set, remove it from the mold.
- Trim edges as necessary to have a neat finished piece.
If using a closed bottom mold:
- Pour properly melted chocolate or tempered chocolate in each side of the mold and let set as normal.
- You will then need to use melted chocolate as a glue, or freeze spray to adhere the two halves together.
If using an open bottom mold:
- Tighly clip the two mold halves together and turn them upside down so the opening is at the top.
- Pour properly melted chocolate or tempered chocolate in the mold until it is filled.
- Refrigerate the chocolate until set.
- After the chocolate is set, remove it from the mold.
- Trim edges as necessary to have a neat finished piece.
